I’ve seen this recipe circulating around lots of blogs and Pinterest for a while now, and decided to give it a whirl. What is it? Simply a brownie mix and a can of pumpkin (egg is even optional). Mix them together, bake them according to the box directions, and what do you have?
A super moist and fudgy brownie.
Easier and healthier than a regular boxed brownie.
And equally scrumptious.
What’s not to love?
Pumpkin Brownie Bites
Makes one 13 x 9 pan or 30 mini brownies

Ingredients:
- One (13×9 family size) brownie mix
- One (15 oz) can pumpkin puree
- One egg (optional)
Directions:
- Mix brownie mix, pumpkin, and egg with a wooden spoon. Spoon into greased 13 x 9 pan or mini muffin tins.
- Bake for about 30 minutes for the pan, and 15-20 for the mini muffin tins (they’re done when they spring back slightly when you touch them).
- Devour!
My Two Cents: As is the case with a lot of pumpkin/chocolate desserts, you can’t even tell that pumpkin was the secret ingredient in this recipe. These came out extremely fudgy for me, so if you’re a fan of cake-like brownies, stick to the regular recipe on the back of the box
So, essentially, if you keep a brownie mix and can of pumpkin in your house at all times, a handy treat is always at your fingertips!



Omigosh, my brother is always ruining me with boxed brownies when I visit home…if he gets a hold of this idea, we are really going to have a problem!
Ooooh! I’ve never tried brownie mix… I’ve done 1 box cake mix + 1 can pumpkin and the texture and taste is amaaaazing! I’ll have to try this one soon
