Dinner tonight was Eggplant Parmesan.

This is one of my favorite meals. It’s also incredibly easy to make and extremely versatile. Serve it on its own, as a side, over pasta — you name it. And it’s the healthier version. No fried eggplant. Simply baked to perfection.
